Every season we make a bucket list  of activities to check off in the months ahead. When we need some inspiration for a quick, delicious popsicle recipe, we turned to our friend and all-star chef Ashton Keefe. She's not only a chef, but also an on-air culinary instructor and food stylist.  See how Ashton gets to add another satisfying check mark  to her bucket list (without spilling  on her all-white look).
I love the idea of transforming juices and smoothies into pops. Summer is the best time of the year for non-cooking cooking.  I take whatever looks freshest at the market, allow it to  macerate (sweat out all that good juice!) with a bit of  sugar, blend and freeze. Couldn’t be easier.
In a recipe I always look for what’s in season and then what would look pretty. I’m a firm believer that we eat with our eyes first. It not only has to taste good, but look good. ​
 The easiest, simplest, most delicious ice pops you’ll ever make. Embrace an everyday celebration by placing in a wine glass and topping with bubbles.  Need a short cut? Purchase the pops, I won’t tell. Serves six.   4 cups of summer fruit  such as peaches, raspberries,  strawberries, blueberries 1/4 cup sugar    The Directions  Place fruit in a large bowl and pour sugar over.  Toss and gently smash with the back of a fork.  Allow the mixture to sit for 20 minutes until  slightly juicy and delicious looking.  Puree and pour in pop molds.  Freeze for at least 6 hours or overnight.  Place pops in glasses and top with bubbles.  Instant party!
Best piece of advice when it comes to cooking?​ Go with your gut! Don’t worry about a recipe or rules, if you stay true to what you like and cook from your heart,  everyone will love it.    WHERE ARE YOU FROM? New Jersey, although I secretly love when people  tell me I “seem Southern.”​   In what place are you the happiest? The beach. Jersey Shore, Montauk, any body of water  with a drink in hand and good company. ​   What’s your favorite outdoor activity?  Running, it’s probably the only place besides the kitchen  where I am totally relaxed and at ease. ​   What do you never leave the house without? Sunscreen and a book. ​   cats or dogs? Dogs.
